September is National Self-Care Month, and we’re all about sharing ways you can take the best care of yourself – through health tips, healthy recipes, farm-fresh foods, and ways to take care of your mind, body, and spirit. A tasty way to take care of yourself is to include nourishing foods that not only help you to feel good, but they also fuel your body with the proper fuel to get through your busy days. If you catch yourself feeling burnt out, tired, or just “meh” overall, then it’s time to take a look at the types of foods you’re eating.
One of our favorite and healthiest foods we suggest eating every day is, you guessed it, potatoes. Potatoes got a bad wrap when the low-carb craze hit diet culture a number of years ago, but there’s more evidence now that shows just how good for you potatoes, and other complex carbohydrates, are for your body and mind. Complex carbs, like the ones in potatoes, are used as energy on your body and in your brain. But potatoes don’t just provide you with healthy carbs, they also provide you the following beneficial nutrients:
- Only 110 Calories: One medium potato makes a healthy side for any meal, or a hearty mid-day snack!
- Potassium: One medium potato with skin provides 18% of the recommended daily value of potassium.
- Vitamin C: Healthy potatoes are a great source of Vitamin C, providing you with 45% of your recommended daily value.
- Fiber: Get 2 grams of Fiber per serving! One medium potato with skin = 1 serving.
- Vitamin B6: Potatoes are a good source of Vitamin B6 with 10% of the daily recommended value.
