- 2- 1.5 lb. bags Klondike Gourmet® Potatoes
- ½ C. mayonnaise
- 1 tbsp. chopped fresh parsley
- 1 tbsp. chopped fresh basil
- 1 tbsp. Dijon mustard
- 1 tbsp. lemon juice
- 2 tbsp. olive oil
- ½ tsp. sea salt
- ½ tsp. fresh ground black pepper
- Spray a grill basket with cooking spray. Preheat grill to medium-high.
- Place potatoes in grill basket and grill until tender, about 10 minutes. Remove potatoes from grill; cool.
- In a large bowl, combine mayo, parsley, basil, mustard, lemon juice, olive oil, salt and pepper. Whisk until well combined.
- Stir the potatoes into the dressing mixture. Serve at room temperature or well chilled.
