- 1 large onion, chopped
- 6 tbsp. butter
- 1 – 1.5lb. bag Klondike Gourmet® Yellow Skin, Golden Fleshed Potatoes, cooked and halved
- Salt and pepper
- Chopped fresh parsley
- In a large skillet, heat butter over low heat. Add onions and sauté until caramelized (will be a deep golden brown.)
- Add cooked potatoes to the caramelized onions. Cook for an additional 3-4 minutes, stirring often.
- Add salt and pepper to taste and sprinkle with chopped parsley. Serve.
