- 1 24oz bag Klondike Gourmet® Red Skin, Golden Fleshed Potatoes
- 1 c. olive oil
- 1 c. lemon juice
- 2 c. chicken broth
- 2 cloves garlic, minced
- 1 tsp. oregano
- Salt, pepper, paprika
- Quarter the potatoes, and place into a roasting pan.
- Mix oil, lemon juice, broth, garlic, and oregano until well combined. Pour over potatoes in pan. Mixture should cover about half the potatoes. (If necessary, make more of the mixture.)
- Cover with foil. Bake at 350°F for 1 ½ hours, or until potatoes are soft. Uncover and cook at 400°F until potatoes are crispy.
